The wrinkled potatoes with mojo picón is one of the Canarian dishes par excellence. And there are few dishes, in which flavor and color come together in such a simple way, but so tasty.

Wrinkled potatoes with mojo picón

The base, the potatoes and as a signature, the mojo, with colorful spices, which will give it a unique flavor. We start with the garlic, chilli pepper and spicy paprika. Ingredients:

  • 15-20 small potatoes
  • Fat salt

To make the green mojo :

  • 1 tablespoon fat salt
  • Fresh parsley or cilantro (8th (gr)
  • 2 tablespoons vinegar
  • 3 tablespoons olive oil
  • 2 clove garlic and 1cc cumin
  • Green pepper (10 grains)

To make the red mojo :

  • 4 garlic clove
  • 1 teaspoon fat salt
  • 1 palmero pepper
  • 1 pimineta picona (cayenne)
  • 1 sweet paprika
  • 1 tablespoon vinegar
  • 2 tablespoons olive oil

How to make wrinkled potatoes?

  • And we get with it, and to begin with we will choose not very large potatoes. Ideally, they should be medium to small. If we do not have the wonderful Canarian potato, we could serve any new potato. They are cleaned well and we proceed to boil them with the salt over high heat and uncovered, that the water covers the potato. Remember that wrinkled potatoes are made with coarse sea salt. The amount of salt is approximate but for each kilo of potato we will use a quarter of a kilo of salt.

How to make the mojo Canarian red picon?

  • In the Canary Islands, mojo picon is usually made with piconas peppers and palm peppers. It is common that in the Penísula we do not have these unique peppers of the island, so they can be replaced by other ingredients. For example, picona pepper for cayenne and palmero pepper for choricero pepper.
  • Remove the seeds and stem of the peppers, leaving them in warm water that rest and hydrate. This will make it grind better. Peel the garlic and if possible remove the germ or inner part, so that it is more digestive.
  • We proceed to beat with the blender, in a suitable container, the garlic clove, salt, cumin, cayenne, hydrated pepper and paprika. Add the olive oil and vinegar and crush with the blender, until the mixture is homogeneous.

How to make green mojo ?

  • Green mojo can have many differences depending on how it is prepared, and this will depend on whether we make it with cilantro or green parsley, or even can be mixed.
  • Take a mortar and pour the ground cumin, the cilantro that is well dried, after washing it well, the clove of garlic, green pepper, salt, vinegar and olive oil and crush everything well. We can do it with a blender without any problem.
